  1. Whisk 2 tbsp sattu into a tall glass of cold water until smooth.
  2. Add juice of half a lemon, a pinch of black salt and roasted cumin.
  3. Stir hard, add ice, drink cold.

Tip: Whisk first with a little water to a paste — no lumps, ever.

A gentler, dessert-like glass.

  1. Whisk 2 tbsp sattu into cold milk.
  2. Sweeten with 1 tsp gur or brown sugar.
  3. Finish with a pinch of cardamom.

Bihar's gift to breakfast.

  1. Mix 1 cup sattu with finely chopped onion, green chilli, coriander, ajwain, salt and 2 tsp mustard oil.
  2. Stuff into rested atta dough balls; seal and roll gently.
  3. Cook on a tawa with ghee until crisp-spotted.

Tip: A drop of lemon juice in the stuffing lifts the whole paratha.
