  1. Knead 2 cups millet flour with warm water and a pinch of salt into a soft dough.
  2. Pat each ball flat between your palms (or between plastic sheets).
  3. Cook on a hot tawa, pressing edges, until spotted both sides.
  4. Serve hot with white makhan and gur.

Tip: Warm water is the secret — cold water makes the dough crack.

A hearty one-pot winter dinner.

  1. Soak ¾ cup cracked bajra 30 minutes; drain.
  2. Sauté cumin, ginger and green chilli in ghee; add bajra and ½ cup moong dal.
  3. Add 4 cups water and salt; simmer 25 minutes until soft.

Tip: Finish with a spoon of desi ghee on top.
